The fatty acid composition (FAC) of milk comprises saturated fatty acids (SFA) and unsaturated fatty acids (UFA), which can be further categorized into monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). Prior research has demonstrated that higher UFA content is associated with a reduced likelihood of tihrombosis formation, while higher MUFA content is linked to a reduced risk of cardiovascular disease. In this study conducted a total of 98 samples of New Zealand-imported milk and 112 samples of domestically produced fresh milk were collected. The milk's FAC was employs Fourier transform infrared spectroscopy (FTIR) principles to measure the FAC and content of milk samples. The results revealed that both UFA and MUFA content in domestically produced fresh milk were significantly higher compared to New Zealand-imported milk (22.7% vs. 21.4% and 25.9% vs. 25.0%, P < 0.001). In summary, the UFA and MUFA content in domestically produced fresh milk exceeded that of New Zealand-imported milk by 6% and 4%, respectively. This suggests that geographical differences in production methods and feed composition can influence the FAC of dairy products. [ABSTRACT FROM AUTHOR]
牛乳中脂肪酸組成(fatty acid composition, FAC)包含飽和脂肪酸(saturated fatty acid, SFA) 及不飽和脂肪酸(unsaturated fatty acid, UFA), UFA 又可細分為單元不飽和脂肪酸 (monounsaturated fatty acid, MUFA)及多元不飽和脂肪酸(polyunsaturated fatty acid, PUFA), 前人研究已證實UFA含量越高, 可降低血栓(thrombosis)生成機率, MUFA含量越高, 可降低罹患心血管疾病(cardiovascular disease)風險。本試驗自2023年1月1日至2023 年9月30日採集市售紐西蘭進口牛乳與國產鮮乳樣品各98件及112件, 牛乳FAC檢測是 應用傅立葉轉換紅外光譜(Fourier transform infrared spectroscopy, FTIR)原理, 測量乳樣FAC 與含量。結果顯示, 國產鮮乳UFA及MUFA皆極顯著較紐西蘭進口牛乳高(22.7 % vs. 21.4%;25.9% vs. 25.0%, P<0.001)。綜上所述, 國產鮮乳UFA及MUFA含量分別較紐西蘭 進口牛乳高6%及4%, 顯示由於地區性生產模戎與飼糧組成的差異, 會影響乳製品的FAC.
